Bwindi Impenetrable National Park

I love visiting National Parks! Seeing creation always reminds me of the wonderful God we serve. I think parks are ways to see the beauty of the world, unmarred by humans. I thought that you might enjoy seeing some of the beautiful scenery of Uganda and learning more about the wildlife in their national parks!

The Bwindi Impenetrable National Park lies in the southwestern part of Uganda, on the edge of the Rift Valley.

This park is make up of rain forests and about half of the world's endangered mountain gorillas live here! In 1994 it was declared a UNESCO Natural World Heritage Site.

The park contains almost 400 species of plants, 120 mammals, and over 350 species of birds. Of the birds, 23 species are endemic* to the Albertine Rift.

* Endemic means "growing or existing in a certain place or region," per Merriam-Webster Dictionary.

National Park information and photos are courtesy of Uganda Wildlife Authority.

Printer Need

One thing that we value at SNH is the communication between sponsors and children. This is a struggle for our Ugandan SNH team members, though, since in order to share sponsor letters with children, the staff have to travel to print the letters and thus incur the costs of travel, computer use and printing.

And then another struggle appears when children write to their sponsors--since cost of mailing is expensive, an SNH staff member has to travel and then scan the letter, again incurring the cost of travel and computer use.

In order to allow more efficient and cost effective communication between sponsors and children, Sherinah, our SNH director, shares the following request:

Dear sponsors and well wishers,

We are requesting for your generous contribution towards payment of a printer/photocopier for SNH. We find it hard to deliver sponsors letters in the mean time due to the fact that printing is expensive and when you add cost of transportation to the the printing center…We could get our own printer so that we reduce cost of transport and printing, and more so to be able to delver children's letters to their sponsors in time. The cost of a printer is 160$ plus ink, in all 200$.

Will you help to contribute towards this cause? THANK YOU.

Our hope is to raise the total of $200 US by October as a gift to the sponsors and children! Any size donation is a blessing!

Beatrice's Goat

Beatrice's Goat is a beautifully illustrated book written by Page McBrier. Although the story was a little long and complex for my three-year-old, he loved the illustrations!

The story takes place in Uganda and shares how a gift of a goat makes a life-changing difference in the life of Beatrice and her family. Not only is this a heartwarming story, but it reveals the struggles faced by children in Uganda and the cost of an education.

The story also shows how the simple gift of a animal like a goat can change the entire circumstance of a family! This book not only was an enjoyable read, but is motivational for making a difference in the lives of children in third world countries!

Recipes from Uganda: Groundnut Sauce

Today I would like to share another recipe from Extending the Table: Recipes and stories from Argentina to Zambia in the spirit of More-with-Less by Joetta Handrich Schlabach.

The author describes Groundnut Sauce like this:

Groundnut (peanut) Sauce and matooks (plantains steamed in banana leaves) are the "mashed potatoes and gravy" of southern Uganda. Ugandans also enjoy boiled sweet potatoes or rice with this sauce, which is they make by grinding roasted peanuts in a larger mortar and pestle.

If you have never seen a mortar and pestle, here is a picture of a kid using a mortar and pestle from Cooking with a Pinch of Salt. A mortar and pestle are used for grinding stuff up into a powder.

And if you watch this video, you can watch a lady use a mortar and pestle as she makes dinner!

Step 07a: Enough Food from Compassion International on Vimeo.

If you would like to make your own Groundnut Sauce, here is the recipe, per the book Extending the Table:

Roast in a saucepan 1 minute:
1 lb. raw peanuts (500 g)
Pound peanuts with mortar and pestle, grind in blender, or put through meat grinder several times to make coarse peanut powder.
Fry in 2 T. oil (30 ml):
3-4 onions, chopped
2 tomatoes, chopped
1 T. curry powder (15 ml)
1 clove garlic, minced
1 t. ginger root, grated (5 ml) (optional)

Add peanut powder.
Cook 2-3 minutes. Add slowly to form sauce:
3 c. water or milk (750 ml)
Cook 15-20 minutes.
Add:
1 t. salt (5 ml)
Serve over rice.

Heroes' Day

June 9 is celebrated by Ugandan's as Heroes' Day. Heroes' Day in Uganda is a day designated to remember those who gave their lives for Uganda. Recently, not only war heroes have been recognized, but medical heroes also! Many Ugandans want to honor all those who gave their lives for Ugandan's future to be better.

Here are some photos of Uganda's current president, Yoweri Museveni, honoring Heroes' Day:

You can see more photos at The Statehouse of Uganda website. And if you would like to learn more about Heroes' Day, I encourage you to visit Holidays Around the World and i-Uganda.

Martyrs' Day

Martyrs' Day is celebrated on June 3rd and recognizes 22 young men who were killed for professing Christianity. These young men were killed by King Mwanga II of Buganda kingdom in 1886. Sometimes Catholics with travel to the town of Namugongo to celebrate Martyrs' Day since Namugongo is the location where the young men were killed.

Here are some photos of Martyrs' Day being celebrated in 2012 in Namugongo (photos from New Vision):

To learn more about Martyrs' Day you can visit Uganda Martyrs' Shrine and Kabiza.
